Ingredients:


3 pounds PORK LOIN

4 LARGE LEEKS

1 Tablespoon BUTTER,DIVIDED

1 1/2 Teaspoon SALT

1/2 Teaspoon PEPPER

1/2 CUP DRY WHITE WINE
 

Preparation / Directions:


CLEAN LEEKS ,CUT EACH IN HALF INCH SLICES,SHOULD HAVE ABOUT 6 CUPS.SOAK IN COLD WATER TO LOSSEN DIRT.RINSE AND DRAIN HEAT THE LEEKSIN 1/2 CUP WATER,1 TEAS.BUTTER .1/4 TEAS.PEPPER1/4 TEAS.SALT IN LARGE DUTCH OVENOVER MEDIUM HIGH HEAT.COOK FOR10 .IMINUTESOR UNTILL LEEKS HAVE WILTED. POUR INTO BOWL. HEAT 2 TEAS. BUTTER IN PAN ADD PORK BROWING ON ALL SIDES.ADD 1/4 TEAS SALT,PEPPER AND WINE.RETURN LEEKS TO PAN.COVER AND SIMMER 2 HOURS.
